The unit is designed to remove the stem from either cauliflower or broccoli.
PRINCIPLE OF OPERATION
Depending on the product (cauliflower or broccoli), variable knife assemblies are used accordingly. To optimize and speed-up the process it is advisable to remove all external leaves prior to loading the product into the machine. The size of the final segments of cauliflower/broccoli depends on the depth to which the knives cut into the product.
The special construction of the conveyor belt allows the product to travel into the cutting chamber individually. Each segment of the conveyor consists of a “nest” in which each flower is placed manually. The size of florrets is determinedet, how depth the knife assembly cuts out the stem.
It is than fed out using an outlet chute either into a designated container or a conveyor belt for further processing. The stems are dropped into a side chute where they are either collected in a container or removed by conveyor belt.
